Cooking: Fruit Filled Jell-O Gelatin

Every time I buy fresh produce for the month it seems to disappear before I can put it in the fridge. While I do love that we are eating more fresh fruits and vegetables, I also love it when we have food for the whole month. One way I stretch our food supply is by planning out dishes instead of simply eating one thing at a time. Other than the traditional fruit salad, I also made Fruit Filled Jell-O gelatin!


What I Used:
1 package store bought mango flavored Jell-O gelatin
2 - 4 tangerines
2 organic gala apples
1/4 cantaloupe
1/4 honeydew melon
*I was planning on using the blackberries, but apparently they were spoiled.*

What I Did:
1) I began by cutting and dicing the fruit into little bite sized pieces.
2) Next I made the mango flavored Jell-O gelatin according to the package directions.
3) After adding the cold water, I placed the diced fruit throughout the gelatin.
4) Then I popped it in the refrigerator for about 5 hours, until the gelatin had solidified.


Tasty! Not only did the fruit absorb a little bit of the mango gelatin flavor, but the gelatin really took on the flavors of the different types of fruit so each bit was a delectable mini citrus party in my mouth. Check back soon for one way I stretch this fruit filled gelatin to last a few days!
